    1 chicken breast, with bone and skin
    approx. 1.5 cup chopped yam with skin
    3 cloves garlic
    approx. 1/2 cup chopped onions
    lemon wedge
    salt & pepper


Put the breast into a roasting pan and sprinkle generously with salt and pepper. Add yams, onions and garlic around the chicken. Squeeze lemon juice over the chicken and put the wedge in pan if desired. Cover and cook at 350 degrees about 1/2 an hour or until chicken is cooked through. Uncover and cook a little longer to crisp it up a bit. Serve with steamed green beans.
