    Shirataki Noodles (rinsed & drained) set aside
    Eggplant (sweated, diced & set aside)
    Veg Broth (mine is homemade and salt free)
    Onions (diced)
    Green Bell Peper (diced)
    Basil (fresh)
    other seasons to taste (I used Hot Shot)


Rinse Shiratake Noodles under hot water, drain and set aside.

Sweat Eggplant in oven at 275 degrees for 20 minutes while dicing all other veggies.

Add: Veg stock and all remaining ingredients to skillet and cook until tender but not mushy. Remove from heat and add shiratake noodles and any other desired seasonings. Stir until all blended well.

Serve warm
