Introduction

My husband doesn't even like lentils, but he likes these! My husband doesn't even like lentils, but he likes these!
Number of Servings: 6

Ingredients

    3 cups water
    1 can diced tomatoes (flavor of your choice; I like fire roasted)
    1.75 cups low-sodium vegetable broth
    2 cups red lentils
    Salt, to taste

Directions

Bring water, tomatoes and broth to a boil, add lentils. Simmer until soft inside but still retaining shape, usually about 20 minutes. Season with salt and serve with rice.
