What do you do with some of the free food that you find in local fields? What do you do with some of the free food that you find in local fields?
Number of Servings: 4


    250g risotto rice
    i onion
    3 cloves of garlic
    half a large puffball mushroom
    250ml whitewine
    30g butter
    15 or so asparagus spears
    mixed herbs-salt and pepper
    900ml stock (veg or chicken)


Serves 4
1. peel outer skin from puffball and the cut into strips.
2. cut onion and garlic and gently fry in olive oil and add puffball and risotto rice. Fry for about 2-4 minutes.
3. Add white wine and then when that is absorbed add stock and seasonings and simmer for about 20 minutes or until liquid is absorbed.
4. Add butter to frying pan and gently fry asparagus.
5. Serve risotto with aspargus on top sprinkled with parmesan.
