    * Uncooked Chicken Thigh, 5 thigh, bone and skin removed, chopped
    * Canned Tomatoes, 6 cup
    * Beans, red kidney, 4 cup
    * Herdez Chipotles (Whole) 2 Tbsp, 2 serving
    * Peppers, sweet, red, raw, sliced, 2 cup
    * Red Onions, raw, 1.5 cup, chopped
    * Garlic, 4 tsp
    * Cumin seed, 1 tbsp
    * Brown Sugar, 2 Tbsp unpacked


Chop everything coarsely. Put into slow cooker and mix. Cook on high for 5-6 hours or on low overnight. Mix once or twice (but not too often!!). When done, you can purée it in the food processor for a more homogenous look, or eat as-is. Best served with a dollop of sour cream! Freezes well! Great for a post-workout feed.
