Introduction

Number of Servings: 6

Ingredients

    16 oz of chicken cut into pieces
    1 C of black beans cooked
    1 C of brown rice cooked
    6 tsp of taco seasoning (mccormick or old el paso 40% less sodium)
    1 C of lettuce chopped
    1/2 C of onions chopped
    1/2 C of green peppers chopped
    1/4 C of black olives chopped
    1 tomato chopped
    1/4 C of water
    6 flour tortillas

Directions

1. Chop up veggies and set aside. ( i use a food processor and it takes a few minutes)
2.Spray a large pan with cooking spray and cook chicken till translucent. Add beans, rice, taco seasoning and water. Bring to a boil simmer for 5 miutes or so
3.Divide mixture among tortillas. Top with lettuce and veggies.
4. Roll up into a burrito.

Makes 6 servings 1 burrito each
