Number of Servings: 12


    .5 cup unsweetened applesauce
    .25 cup Splenda blend
    .5 cup eggbeater
    .5 cup nonfat milk
    2 cup flour
    2 tsp baking powder
    .5 tsp salt
    1 tsp cinnamon
    .25 tsp nutmeg
    2 cup fresh or frozen blueberries
    2 tsp granulated sugar


In a medium mixing bowl, mix applesauce and sugar. Add eggbeater and mix well; stir in milk. Combine dry ingredients and add to the mixture; stir to combine. Gently fold in blueberries. Fill muffin cups about 2/3 full (spray if needed). Sprinkle tops with a little sugar. Bake in a preheated 375 degree oven for about 20 minutes, or until lightly browned. Makes 12 muffins.
