Best Black Beans, EVER! Best Black Beans, EVER!
Number of Servings: 6


    * Beans, black, 1 15oz can
    * Olive Oil, 1 tbsp
    * Hatch Green Chili Peppers, canned, 1 can
    * Garlic, 1.5 clove, minced
    * Onions, raw, .5 cup, chopped
    * Carrots, raw, .5 large (7-1/4" to 8-1/2" long), diced
    * Cilantro, raw, 2 tbsp, chopped
    * Red Ripe Tomatoes, 1 roma, chopped
    * Lime Juice, 1 tbsp (remove)
    * Water, tap, .25 cup (8 fl oz)
    * Chicken Broth, .5 cup (8 fl oz)
    * *Cumin .5 tbsp
    sour cream and cilantro for garnish


Place all ingredients (except water) into sauce pan over medium heat. Bring to a bubble then reduce to a simmer and add water as needed. Let simmer, stirring occasionally, until carrots are soft and all is yummy! Enjoy.
