    1 mango, peeled and diced
    1 cucumber, peeled, seeded, and diced
    1 jalapeno, seeded and diced
    1/4 cup red onion, diced
    1/4 cup Italian parsley, finely chopped
    the juice of 1 lime


Mix all ingredients together, season with salt and pepper, let flavors meld for 10-15 minutes before serving.
