    3/4 cup cooked, mashed sweet potatoes
    1 1/2 cup flour and more as needed to prevent sticking
    2T canola oil
    1/4 tsp salt
    3/4 tsp cinnamon or garam masala
    canola oil spray for cooking


combine sweet potato, oil, cinnamon and salt.
Incorporate 1 cup flour.
Oil your hands and form a dough ball.
Knead dough, adding more flour to prevent sticking. Knead for about 5-10 minutes until the dough gets elastic.
Cover with plastic wrap and let rest for 30 minutes or refrigerate to use up to 3 days later. (If you do this, let it warm to room temp before working with it.)
Cut the dough into 4 pieces, then each piece in half. Form into 8 balls.
Using flour to prevent sticking, roll each ball into a 6" round.
Brush with oil and fold in half. brush again with oil and fold again. Roll triangle out until it is 6". Repeat with remaining balls.
Heat a heavy cast iron pan. Coat with oil spray. Add parathas and cook a couple of minutes, medium heat until bottom gets brown flecks on it. Spray tops with oil spray and flip over, cooking about 1 more minute.
Enjoy with dal and curry for a dinner or with chutney as a snack.
