    2 28 oz cans Diced Tomatoes
    1 Cup Dried Black Beans, soaked
    1 Cup Small Red Beans, soaked
    20 oz O 99% Fat Free Ground Turkey
    3 Cups chopped Onion
    2 Cups chopped Green Pepper
    1 3/4 Cups chopped Carrot
    3 Tbsp Chili powder
    2 tsp ground Cumin
    2 tsp ground Coriander
    1 Tbsp minced Garlic
    2 tsp Extra Light Olive Oil
    1/2 tsp ground Cinnamon
    1/2 tsp ground Nutmeg, ground
    20 fresh Basil leaves


Brown the turkey in a stock pot; once browned, pulse quickly 10 times in a food processor to create a finer texture. Add your onions, green peppers, and carrots to stock pot in 2 tsp of olive oil. Cook until onions are translucent. Add garlic. Add tomatoes, in juice; stir. Add beans; stir. Add turkey; stir. Then add chili powder, cumin, coriander, cinnamon, and nutmeg; stir to incorporate fully. Simmer on low for two hours (or more, if you have the time!). Add basil for the last half hour of cooking. Enjoy alone or over brown rice or macaroni. You can modify the spiciness of the chili to your taste with hot sauce or cayenne pepper, but wait until it's done cooking and taste the final product before adding too much!
