    1 tbsp vegetable oil
    1 cup onion, chopped
    4 tsp garlic, minced
    2 cups chopped zucchini
    2 cups chopped summer squash
    2 cups chopped tomatoes
    1/4 cup chopped green onion


Heat oil in a large saute pan. Add onion saute until clear. Add chopped garlic, saute until fragrant. Add zucchini and yellow squash saute until done, but still al dente. Add fresh tomatoes and saute until just wilted. Add green onion and stir to combine. Salt and pepper to taste.
