Introduction

This is a modification of traditional southern yams (usually dripping with everything sweet and yummy). This is a modification of traditional southern yams (usually dripping with everything sweet and yummy).

Ingredients

    2 yams or sweet potatoes
    1 apple
    1 T. canola oil
    1/2 lemon
    1/2 C chicken stock
    1/2 C orange juice
    1 cinnamon stick
    1/4 C raisins
    2 1/2 T brown sugar
    2 T mascarpone cheese
    2 T vanilla
    1/2 t allspice

Directions

1. Peel and slice yams lengthwise into medium sticks..
2. Peel 1/2 of the apple, cube the entire apple. Squeeze
lemon juice over the cubed apple and set aside.
3. Pour canola oil into skillet. Add sweet potatoes on med.
heat for 5-10 min.
4. Gradually alternate the addition of chicken stock and
orange juice until yams are tender. Add cinnamon stick
and simmer on low heat for 10 min.
5. Stir in raisins, brown sugar and mascarpone cheese.
Simmer until sauce begins to thicken.
6. Add vanilla and allspice and serve.
