    Homemade Italian Sausage
    1/2 pound lean ground beef
    3/4 tsp salt
    1 3/4 tsps paprika
    1/3 tsps garlic
    1/4 tsp fennel seeds (use mortar and pestal to crush)
    1/2 tsp ground black pepper
    1/8 tsp crushed red pepper flakes, titrate for kick

    1 lb of lean ground beef
    lb lean ground beef with Italian sausage spice blend [see above recipe]
    1/3 c rolled oats
    1/4 c skim milk
    1 small onion, minced
    1 stalk celery (with leaves), minced
    3 tablespoons of dried parsley (1/2 c chopped fresh)
    1/4 c minced red pepper
    1/2 tsp dried thyme leaves
    1 clove garlic, minced
    1 egg, lightly beaten ( or egg equivalent)
    1/4 c ketchup
    1 tablespoon Worcestershire sauce
    1/4 tsp pepper


Homemade Italian Sausage
Combine all the spices together and then mix well with the ground beef. Can be made ahead as well.

1. In large bowl, combine ingredients, mix well.
2. Bake @ 350F for 1 hour in a 9 x 5 inch loaf pan that has been sprayed with a nonstick spray, or until meat thermometer registers 170F.
Let stand for 10 minutes, cut into thick slices.
