    1/2 c chopped onion
    1/2 c chopped celery
    1/2 c chopped bell pepper
    1/2 c chopped carrots
    1 garlic clove minced
    1 1/2 lbs of boneless/skinless chicken breast chopped
    1 can Campbell's Healthy request cream of mushroom soup
    1 tsp Nature's Seasoning
    1 tsp Sea Salt
    1 tsp ground black pepper
    1 cup 1% milk
    1/4 c daisy light sour cream
    2/3 c grated cheddar cheese
    3 c prepared as directed instant brown rice


Makes 6 servings.
In a deep skillet, brown chicken, season with nature's seasoning 5 minutes. Set aside. In same skillet add in onion, bell pepper, celery, and carrots, salt and pepper and saute til almost translucent. Add chicken back to skillet. Add in minced garlic clove. Stir together. Add in cream of mushroom soup and stir. Add in Milk and stir to coat. Simmer 15 minutes over medium low heat. Add in Sour cream and warm through. Top with shredded cheese and cover for a 2-3 minutes or until cheese is melted. Serve over cooked brown rice.

  • I've made this recipe many times w/ out the veggies will have to try the veggies now. I'm allergic to onions and it seems everybody is crazy about onions. I won't be putting onions in mine but broccoli instead or bell peppers as I feel they take over a recipe. Either aspargus of Califlower haven - 12/9/11
