    4 medium beets
    8 ounces dried pasta
    1 big clove garlic
    2 tbsp. olive oil
    Dash of salt
    Pepper to taste
    1/2 cup chicken broth
    1/4 cup minced red onion
    1 tbsp rosemary
    1 tbsp dried red pepper flakes
    1 cup freshly grated Parmesan


Take about 4 medium sized beets and about 8 ounces of dried pasta. Slice and dice the raw beets up fine (it's not necessary to peel them - just cut away the yucky parts and scrub with a soft brush). Mince 1 big clove of garlic into microscopic bits. Throw the beets in a pan with 2 tbsp. olive oil. Sprinkle the beets with salt and pepper to taste and cook over moderate heat, stirring.

Cook pasta, meanwhile.

When the beets are just tender, add the garlic and cook the mixture for one minute. Add 1/2 cup chicken broth and simmer the mixture until the beets are tender. Stir in some minced red onion, a little chopped rosemary, and some dried red pepper flakes. Spoon the mixture over angel hair pasta with freshly grated Parmesan.

Optional: add a pinch of curry or chopped up tomato
