    6 Sweet Peppers, cap removed
    1c dry Couscous,prepared according to directions
    2 large Red Ripe Tomatoes, diced
    1c Broccoli, fresh, chopped
    1c cooked Black Beans
    1/2 c Black Olives,chopped
    5 Basil leaves, chopped
    3 cloves Garlic, minced
    2c Tomato Sauce, divided
    4 oz Mozzarella Cheese, part skim,thinly sliced into 6 slices
    6T Parmesan Cheese, grated


Set prepared peppers aside.

In a large bowl combine remaining ingredients except the cheeses and tomato sauce. Mix well.

Place 1c sauce in bottom of slow cooker and turn on low.

Fill peppers with mixture and place in slow cooker. Por remaining 1 c sauce over peppers and cook on low for 4 hours.

About 10 minutes befroe serving place mozzarella on top and allow to melt. Dish peppers and sprinkle 1T parmesan over each pepper.
