Adapts well to whatever ingredients that you have on hand.
Versatile...serves well over rice,pasta or a baked potato or works well as a side dish.
Mushrooms make a nice addition, as well.

Number of Servings: 4

Ingredients

    1/2 Cup of chopped onion
    1 clove of garlic minced
    1/2 Green Bell Pepper chopped
    1 Can Of Hunt's Diced Tomatoes w/ Basil,oregano, & garlic ( or plain diced tomatoes per taste)
    3 tsp sugar ( to help cut acidity of tomatoes)
    salt & pepper to taste
    Mrs Dash Italian seasoning to taste
    2 Cups Cubed Eggplant

Directions

Heat Olive Oil in a large pan
Add Garlic,Onion & Pepper and Saute'
Add Tomato,Sugar, Spices
Add Eggplant
Bring to a boil
Stir well,lower heat
Cover and simmer for 25 minutes
stirring occasionally

Serves 4 ~~1 cup servings
