Ingredients
-
1/4 cup of all purpose flour
1/4 tsp of salt
1/4 tsp of pepper
4 boneless skinless chicken breasts
2 tbsp extra virgin olive oil
3 cloves garlic minced
1/2 tsp sage
1 cup of chicken broth
2 tbsp balsamic vinegar
2 tsp of liquid honey
1 tbsp dried parsley
Directions
In a bowl or plastic bag mix the flour, salt and pepper then coat each piece of chicken in the mixture.
In a large non stick skillet heat half of the extra virgin olive oil over medium heat until chicken is no longer pink inside (about 15 minutes). Remove from the pan and keep it warm.
Add the remaining oil to the pan, cook the garlic and sage until they are a golden brown (about 1 minute). Sprinkle in any remaining flour mixture and cook while stirring it all together for 30 seconds. Stir in the chicken broth, vinegar and honey and then cook it until it is thick enough to coat the back of a spoon.
Return the chicken to the skillet (along with any juices the chicken created while out of the pan) and turn them continuously to coat each piece. Cook until the chicken is glazed (about 1 minute), sprinkle it with parsley and serve.
This makes 4 servings
