    Patty Pan squash , 6
    Progresso Bread Crumbs - Italian Style, 3/4 cup
    Mushrooms, fresh, 1.5 cup
    Olive oil, 3 T
    Scallions, raw, 4 medium (4-1/8" long)
    Garlic, 4 cloves


Makes 6 Servings

Preheat oven to 350 degrees.

Wash squash and boil until just tender. Place them in a colander and run cool water over them. Cut the tops off and scoop out the seeds.

Chop the scallions and mushrooms finely. Sautee in 2 T of the olive oil along with the garlic. Add salt and pepper to taste. Remove from heat. Stir in the bread crumbs and drizzle in the remaining T of olive oil. Mix will and stuff into the squash. Bake, uncovered, until the tops are brown.
