Introduction

Ingredients

    Half a 10 ounce package of spinach
    2 ounces sundried tomatoes packed in oil
    4 cloves garlic, crushed
    2 tsps rosemary leaves, crumbled
    1/4 cup balsamic vinegar

Directions

Makes 4 1.5-cup servings

Place tomatoes in oil into a small skillet. Heat over medium heat. Add crushed garlic and saute til fragrant. Add rosemary and Balsamic vinegar and cook until it bubbles and reduces slightly. Pour over spinach and toss. Add more Balsamic vinegar to taste.
