    1 1/2 pounds left over chicken
    3 T EVOO
    1 large onion, chopped
    3 cloves garlic
    1 jalapeno pepper
    1 rounded T chili powder
    1 16 ounce jar tomatillo salsa
    1 beer, any brand
    1 quart chicken stock
    4 handfuls tortilla chips
    cilantro leaves
    juice of 2 limes


Heat a heavy bottom pan over medium high heat. Add EVOO and cook onion, garlic and jalapeno until soft. About 4 minutes. Add chili powder and cumin to taste, cook another minute. Add tomatillo salsa, beer and stock. Bring up to a bubble and add shredded chicken. Simmer 10-15 minutes. Meanwhile grind 2 handfuls of tortilla chips and cilantro leaves in a food processor. Add to chili and cook another 8-10 minutes. Right before serving add lime juice.
