Ingredients

    1 fist size onion, diced
    stalks celery, diced
    1.5 cups baby carrot, sliced
    8 oz mushrooms. sliced
    64 oz chicken broth
    1 10oz can Rotel tomato-undrained
    1cup tomato sauce
    3 Tbls soy sauce
    1lb package potato Gnocci
    1 tenoz package frozen spinach
    meat only from 1 rotisserrie chicken( shredded)

Directions

In a large pan place first 4 ingredients and saute, covered over med heat until carrot is almost tender.

Add broth, tomato sauce, rotal omato, soy sauce. potato Gnocci, spinach and chicken- allow to come to full boil then reduce heat and simmer 30 minutes covered- stirring occaisionaly...add salt and pepper to satse just before serving.

Makes 10-12 generous 10-12oz servings.
