    1 large can solid white tuna in water
    2 tbsp canola oil
    1 tbsp mayo
    1 tsp yellow mustard
    1 tbsp chopped shallots
    8 slices tomato
    8 half-oz slices of Swiss cheese
    4 English muffins


Mix tuna with mayo, oil, mustard, and shallots. Add spices to taste.
Toast English muffins.
Top each muffin half with 1/8 of tuna mixture.
Top each with 1 half-oz slice of Swiss cheese and 1 slice of tomato.

Makes 2 open-faced muffin sandwiches per serving.
