    3 C chopped, Steamed Broccoli
    12 eggs (or 6 cups egg substitute)
    6 oz finely shredded low-fat cheddar cheese
    Olive oil spray - aprox 12 servings


Preheat over to 350 degrees F. Lightly spray 24 cups of a non-stick muffin pan with olive oil spray.

Divide broccolo evenly among the cups (aprox 2 Tbsp in each). Seprately, crack one egg at a time and whisk then pour the scrambled egg onto the broccoli. Bake frittatas for 7 - 9 minutes or until almost set.

Sprinkle cheese evenly over the tops of the frittatas. Bake for 8 - 10 more minutes, or until the egg is no longer runny and the cheese is melted.

Put muffin tin on cooling rack to cool for 2 minutes. Take frittatas out and serve.

2 frittatas per person. Makes 24 frittatas. Enjoy.
