Ingredients

    3 eggs
    1/4cup + 2 TBSP oil (can use applesauce instead, to lower the fat & calories)
    1/4 cup sugar free syrup (I used agave nectar, which is included in the nutrition info. it has 60 cal per TBSP)
    2 TBSP water
    1TBSP vanilla
    1 C ground flaxseed
    1/2 tsp baking soda
    1/2 tsp baking powder
    2 TBSP cinnamon
    1.8 tsp salt

Directions

In med bowl, beat eggs w/ fork. Beat in oil, syrup, water & vanilla. In sm bowl combine remaining ingredients, then stir into egg mixture. Let stand about 5 min. Spoon into well greased muffin cups (w/o paper). Bake 350 F 12- 15 minRemove from tin at once to cooling racj. Store in fridge. can add chocolate chips.
