Number of Servings: 3

Ingredients

    2 slices bacon cut into small strips
    1 1/2 medium potatoes
    1 tablespoon olive oil
    1/4 cup onion diced
    4 eggs
    2 tablespoons milk
    1/2 cup shredded cheese

Directions

Brown bacon until crisp, dice up potatoes and add to pan along with olive oil, cook unil slightly brown, add onion and cook unilt potatoes are brown and onions translucent. Scramble eggs with a bit of milk salt and pepper to taste and add to pan, cook over low heat until eggs are still a bit runny add cheese mix and serve
