    1/8 cup finely chopped red onion
    1/8 cup finely chopped red bell pepper
    1/8 cup finely chopped orange bell pepper
    1/8 cup finely chopped yellow pepper
    1 tablespoon white wine
    2 teaspoons minced garlic
    2 teaspoons red pepper flakes
    1 piece sun-dried tomato, finely chopped
    1/2 cup baby spinach
    2 tablespoons Trader Joe's Original Hummus, No Tahini
    1 Trader Joe's Whole Grain Tortilla
    1 ounce Hallouimi cheese, chopped into small cubes (you can substitute any cheese, such as feta)


Put all veggies, garlic, and red pepper flakes in a pan on medium-high heat. Stir constantly until the mixture is soft. Add wine and lower heat to low.

Spread hummus on tortilla. Top with vegetable mixture, sun-dried tomato, and cheese.

Can be served right away or toasted to make the tortilla crispy.

Makes one single-serving personal pizza.

Can easily be made vegan by using a vegan tortilla and cheese substitute (or omitting the cheese completely).
