    6 cups chicken broth, low sodium, homemade is best.
    6 oz. fresh spinach
    84g dry spaghetti
    3 eggs, beaten
    1 oz. grated parmesan and romano cheeses.


Boil spaghetti for approximately 4-5 minutes (par-cooked).
Bring chicken stock to a boil and whisk quickly while pouring in the beaten eggs.
Lower the mixture down to medium and add the spinach, cheese, and spaghetti. Simmer until everything is hot and then season with salt and pepper as needed.

Makes 4 servings.
