Ingredients

    1 Whole Chicken, Cut up
    1 Lg. Bag of Frozen Mixed Vegetables
    1 Can of Yellow Corn, Drained
    2 Cans of Low Salt V8 Juice
    2-3 Small Potatoes, Pared and diced
    1/2 of a Large Bag of Egg Noodles
    1 teaspoon of each:
    Thyme, Tarragon, Oregano
    Salt and Garlic Powder, to taste

Directions

Place cut up chicken in a large 8 quart stock covering with plenty of water (around 3 inches from the top) and bring to a boil on med./high heat for 20 mins. or until done. Remove the residue that accumulates with a slotted spoon as it boils - this will make the broth clearer.

When done, turn off - retain the soup stock and remove the chicken with tongs and allow to cool.

Debone, then dice the chicken and place it back in the soup stock pot along with all the ingredients - EXCEPT the Egg Noodles. Bring back to a slow boil.

When the diced potatoes are soft, add the 1/2 a bag of egg noodles and cook the remaining minutes according to the egg noodle bag's directions.

Serve with saltines, cornbread, etc. If you really want to jazz it up, add Hot Sauce to your serving!

Makes 16 2-Cup Servings.
