Introduction
I found this recipe on the back of the Kroger Reduced Fat Baking Mix box, then tweaked it just a bit to make it healthier and add more flavor! Ingredients

1 3/4 Kroger Reduced Fat Baking mix
1/2 cup skim milk
1lb ground turkey breast (93% lean)
1 jar (16oz) Pace Picante Sauce
1 medium bell pepper (about 1 cup)
1/2 medium onion (about 1 cup)
1 jalapeno
1 cup shredded part skim mozzarella
1 cup shredded 2% Mexican cheese blend
Directions
Brown 1lb ground turkey breast in a nonstick skillet with 1 tsp olive oil. Chop 1 medium bell pepper, 1/2 medium onion and 1 jalapeno pepper (de-seeded), stir cooked turkey, veggies and 2 cups salsa together in a bowl.
Mix milk and baking mix in another bowl until a soft dough forms. Dust a counter with some more baking mix and then turn out the dough onto the counter. Knead it 10 times then roll it out unti a rectangle that is about 1/4 inch thick. Cut that into 1"x1" pieces and drop them into a 9"x13" baking dish greased with 2 tsp olive oil.
Pur turkey mixture on top of biscuit pieces and bake in a 350 degree for 20 minutes. Then top with 1 cup shredded part skim mozzarella and 1 cup shredded 2% Mexican cheese blend and bake for 10 more minutes or until cheese is melted.
Slice into 8 squares and serve!
* I used Olive Oil because I was out of non stick spray. Removing that would take about 120 calories and 14g of fat out of the dish, but I was making do with what I had on hand.
