Introduction

As a diabetic, I try to take the sugar out of recipes. This recipe originally called for sugar instead of Splenda, so it was easy to substitute. Other options include using almonds, raisins, red onion, mandarin oranges or bacon bits, but this is my favorite. As a diabetic, I try to take the sugar out of recipes. Ingredients

    2 Packages Oriental Flavored Ramen Noodles (must be oriental)
    1 12oz bag Broccoli Slaw
    1 C Slivered Almonds
    1 C Craisins
    3/4 C chopped Onion

    Dressing:
    1/3 C Vinegar
    1/4 C Olive Oil
    1/2 C Splenda
    1/2 C Water
    Seasoning Packets from Ramen Noodles

Directions

Break noodles into small pieces, reserving flavor packets for the dressing. Toss noodles, slaw, almonds, craisins and onions in a large bowl. Set aside and make dressing. Pour dressing over slaw mix.

May be served immediately for extra crunchiness or the next day for a more blended flavor.

Makes about 8 1-cup servings.
