Introduction

Tomato based soup made with lean ground beef, chock-full of vegetables. A family favorite in my home, especially on cold days. A piece of cornbread goes great with this soup. Ingredients

    1 lb lean ground beef 93/7%
    1 onion, diced
    32 oz bag frozen mixed veggies
    2 28 oz cans diced tomato's
    1 28 can water (enough to cover vegs)
    1 14 oz can diced rutabaga's, drained & rinsed
    3 russet potato's, diced
    salt/pepper/garlic to taste, and/or any other seasonings you prefer

Directions

Makes 12 one cup servings, approximately.

In a large pot, brown ground beef and onions, then drain. Add the remaining ingredients, and bring to a boil. Reduce heat to low/simmer, stir occasionally. I usually let the soup simmer for 1 to 2 hours.
