A slimmed down version of a recipe from recipezaar.com
I substituted applesauce for the oil in the original recipe and that even left room to add chocolate chips. Yum!

Number of Servings: 24

Ingredients

    3 eggs
    2 cups White Sugar
    1 cup unsweetened applesauce
    1/3 cup unsweetened cocoa powder
    1 1/2 tsp. vanilla extract
    2 cups grated zucchini
    3 cups flour
    1 tsp. baking soda
    1/2 tsp. baking powder
    1 tsp. salt
    1 tsp. cinnamon
    1 cup chocolate chips

Directions

Preheat oven to 350F degrees

Lightly grease and line two 12 cup muffin pans

In a large bowl, beat eggs.

Beat in sugar, oil, and applesauce

Add cocoa, vanilla, zucchini, and stir well.

Stir in flour, baking soda, baking powder, salt, and cinnamon.

Mix until just moist. Gently fold in chocolate chips.

Fill muffin cups 2/3 way. Bake for 20-25 minutes.

Cool on a wire rack.
