    Eggplant, fresh, 1 eggplant, unpeeled (approx 1-1/4 lb
    Onions, raw, 0.5 medium (2-1/2" dia)
    Garlic, 5 tsp
    Tomato Sauce, 1 cup
    Thyme, ground, 1 tbsp
    Basil, 1 tbsp
    *2% shredded italian cheese blend, 0.5 cup
    *Grated Fat Free Topping (Parmesan Cheese Replacement), 6 serving
    Red Ripe Tomatoes, 6 slice, thin/small


Slice eggplant lengthwise, scoop out inside, leaving about 1/4 inch. Chop and sautee in EVOO with garlic and onion until cooked. Add sauce and spices. Layer in hollowed eggplant with cheeses , Put sliced tomato on top, sprinkle with parm cheese topping. bake at 400 for 30-40 minutes.
