    Beans, black, 1.75 cup (remove)
    Sweet Corn, Fresh, 4 ear, medium (6-3/4" to 7-1/2" long) (remove)
    Scallions, raw, 3 medium (4-1/8" long) (remove)
    Red Ripe Tomatoes, 2 medium whole (2-3/5" dia) (remove)
    Cilantro, raw, 4 tbsp (remove)
    Parsley, 5 sprigs (remove)
    Garlic, 1 clove (remove)
    Salt, 1 tsp (remove)
    Pepper, black, .5 tbsp (remove)
    *Cumin - ground (1 tsp), 2 tsp (remove)
    Jalapeno Peppers, .25 cup, sliced (remove)
    Juice of .5 lime


Cut corn off the cob. This can be raw or cooked. Grilled corn is especially delicious in this. If corn is not in season you can substitute frozen or canned.
Drain can of black beans and rinse.
Chop herbs and garlic fine, and slice scallion thinly.
Dice jalapeno or any pepper of your choice
Chop tomato.
Toss all ingredients together in a large bowl.
Allow to sit in fridge for at least 15 - 20 min to llow flavors to come together.
