    11/2 c. chopped green pepper
    1 Tbsp. chopped onion
    1 Tbsp. canola oil
    1/2" thick sliced tomato, chopped
    1 oz. part skim mozzerella cheese
    fresh basil leaves (about 3) torn in small pieces
    1 slice ham (6 1/4"x4"x1/16"thick)
    1 whole wheat (low carb) tortilla


In medium size skillet, saute green pepper and onion in canola oil on medium high heat. On plate arrange the tomato (best if seeded and squeeze extra juice out), mozzerella, and basil. After 2- 3 minutes green pepper and onion should be done, place on top of ingredients already on the tortilla. Lay tortilla flat in skillet. Tear ham in pieces and place on top. You can add a bit of balsamic vinaigrette if you like. When bottom of tortilla becomes a bit darker than golden brown, fold in half with a spatula. After a minute or so, flip quesadilla over. After another minute, slide onto plate and serve.
