    Arborio Rice with Tomatoes and fresh mozzarella.


Bring a large stockpot of salted water to a boil over high heat. Add the rice and boil until al dente, 12 to 15 minutes, stirring a few times. Drain in a colander.
Meanwhile, in a large nonstick skillet, heat the oil over medium-low heat. Add garlic and chopped basil and cook, stirring constantly, for 2 minutes. Add the vinegar, salt and pepper and cook, stirring constantly, for 30 seconds. Add the tomatoes and rice and toss until just heated through. Remove from heat and let stand until barely warm. Add the cheese, tossing gently yet thoroughly to combine. Serve slightly warm or at room temperature. Garnish with basil leaves.
