    1 litre carrot juice
    2 sweet potatoes peeled & diced into 2cm chunks
    400 g can chick peas drained
    4cm chunk of creamed cocnut
    1 small hot red chilli pepper chopped(seeds left in)
    2cm piece of root ginger (Finely chopped)
    1 clove of garlic(finely chopped)
    large hanful of spinach.I used (Broccoli)
    leaves from 2 srigs of thyme (finely chopped)


1. put carrot juice in a medium pan and bring to the boil.Add sweet potatoes chick peas,coconut, chilli, ginger,&2 sprigs of thyme.
2. simmer gently,cover for 10 mins or until the potatoes are soft, shred the spinach if using andadd to the soup5 mins befor the end of the cooking time. Leavethe soup chunky or mash up the chikpeas and potatoes with a masher if you want This soup is rather thjick so adjust it to your taste with more carrot juice
3. garnish with corriander and a dribble of cream or yogurt.
4. please note that the cream or yogurt have not been included in the calculations because I didn`t uuse them
