    4 - 4 oz tilapia fillets, 2 cups sliced onion, 2 garlic cloves (chopped), 1/4 tsp. crushed red pepper, 1 tbls. olive oil, 2 large tomatoes (chopped).


In cast iron skillet add 1 tbls. olive oil, 2 chopped garlic cloves, 1/4 tsp. crushed red pepper, 2 cups thinly sliced onion, and 2 large tomatoes chopped, season to taste with seasoned salt. Saute until vegetables are almost soft. Rinse and dry 4-4 oz. tilapia fillets season well with cajun seasoning. Place tilapia on top of sauted vegetables in skillet and cover on medium high heat until fish is soft and flakey (about 10-15 minutes). Yields four servings. Delicious served over rice, pasta or grits.
