Ingredients

1 boneless beef rump or bottom round roast (3-4 lbs)
    2 C barbecue sauce
    1 C root beer (don't use diet)
    Salt and Pepper to taste

Directions

Place beef in a slow cooker. In a large measuring cup or bowl, mix 1 1/2 C of the barbecue sauce and the root beer and pour over the beef. Cook on low for 10-12 hours. About 20 minutes before serving, remove beef from slow cooker and set aside. Pour juices from the slow cooker into a large skillet and cook over med-high heat for about 15 minutes, stirring occasionally. Juices should thicken and reduce to about 3 C. Meanwhile, shred beef with two forks and return beef to the slow cooker. Add the remaining 1/2 C barbecue sauce to the thickened juices and pour over beef, stirring well. Salt and pepper to taste (you may not need it at all!) Spoon about 1/2 C mixture onto each bun and serve.
