    1 tsp Olive oil
    1 tsp butter
    2 bay leaves
    1/2 onion, chopped
    6 brussel sprouts, quartered
    250g swiss chard or English spinach, leaves shredded
    50g bacon, trimmed of all fat and diced (breakfast rasher)
    1/2 tsp garlic powder
    1 tsp dried thyme, or Italian herb mx


Heat oil and butter in a large non stick frying pan over medium-low heat.
Add bay leaves, garlic, thyme, onion, bacon, brussel sprouts, and chopped chard stems and cover with a tight fitting lid and cook slowly for 10 minutes until softened.
Add swiss chard leaves, shredded, stirring until wilted. Cover and cook gently 5 mins longer, or until tender
Season with salt and pepper
