Good old fashioned recipe of sweet bell peppers stuffed with rice and beef. Good old fashioned recipe of sweet bell peppers stuffed with rice and beef.
Number of Servings: 6


    12-16 small sweet peppers, or 6-8 large peppers
    1.5 pounds 93% lean ground beef
    3 cups cooked rice, white or brown
    2 small cans tomato paste
    1 tsp salt (optional)
    1 medium chopped onion


Clean and remove tops, inside membranes, and seeds from peppers. Saute the ground beef and chopped onion together until cooked through. Meanwhile, blanch peppers in boiling water for 3-4 minutes. Mix tomato paste with hot water with a whisk until pourable consistency. Make it slightly watery, since this will cook down and thicken. Mix beef onion mixture, rice, and 1 cup of the tomato mixture. Pack the insides of the peppers with this mixture, placing each one in a large pot or pan. Pour remaining tomato mixture over all. Simmer on stove on low heat for an hour, or until the peppers are well cooked. Optional: add several teaspoons sugar to tomato mixture to neutralize acid.
