    2 C. buttermilk
    1/4 C. 1% Milk (can use skim)
    2 C. oatmeal (quick or old fashioned oats)
    1/4 C. buckwheat pancake mix (Hodgson Mill is good)
    1 t. baking soda
    1/2 C. egg beaters (or 2 fresh eggs)


Mix buttermilk, milk, and oatmeal and refrigerate overnight.
Mix remaining ingredients into oatmeal mixture. If batter appears too thick add more milk. Pour into hot skillet sprayed with non stick spray and give pan a little shake to spread batter. Makes 4 servings of 2 pancakes each.
