    1 -12oz can Corned Beef
    6 medium potatoes, diced or sliced
    1/2 cup onion, diced
    1 Tbsp Olive oil
    Salt and Pepper to taste


Heat large skillet with 1 Tbsp olive oil. Dice the potatoes and place in hot skillet. Cook on medium heat until almost done or tender. Add diced onion and saute for a few minutes until onion is translucent. Add the can of corned beef and stir into potatoe mixture. Add pepper to taste and continue to cook until Corn Beef is heat through.

Makes 6 servings (309 Calories) or 4 large servings(464 Calories)

Serve with Steamed Cabbage for a nice meal.
