    400g chicken breast
    1 red pepper
    120g bok choy
    1 green pepper
    1 onion sliced
    1 packet of Orient Soba noodles
    150ml olive oil
    1 Tbsp lime juice
    1Tbsp wasabi
    1Tbsp lemon juice
    1Tbsp sugar
    1tsp sesame oil
    2 Tbsp light soya sauce


Place dressing ingredients in a bowl, whisk until well combined and set aside.
Grill or BBQ chicken and slice thinly. Grill whole green and red peppers until skin blackens. Remove from heat and let it stand for 5 minutes. Peel and cut peppers into strips. Cook the soba noodles in boiling water for 2 minutes.
Rince in cold water and drain well. Toss noodles, peppers, onion, bok choy and half of the dressing in a large serving bowl. Arrange chicken on top and cover with remaining dressing. Sprinkle with nori (optional). Serve.
