Ingredients

    1 cup almond flour (3/4 cup almonds ground finely)
    1/4 cup granular Splenda
    1 egg white
    1/8 tsp. salt
    1/2 tsp. ground cinnamon
    1/2 tsp. vanilla extract
    1 tsp. Splenda and 1/8 tsp. cinnamon for topping

Directions

Preheat oven to 350 degrees F. Mix all ingredients together well. Line a cookie sheet with parchment paper. Use 2 teaspoons to divide mixture into 24 teaspoon sized cookies on paper. Press down slightly and sprinkle with 1 teaspoon additional granular Splenda mixed with 1/8 tsp. cinnamon. Bake for 15 minutes. Makes 8 servings of 3 cookies each.
