    1 1/2 lbs. ground turkey
    3 oz. chopped mushrooms
    3 oz. chopped onions
    1 can plain tomato sauce
    1 c. long-grain brown rice
    1 can Contandina pizza sauce
    1/4 c. mozzarella cheese
    4 large green bell peppers
    2 tsp basil
    2 tsp parsley
    1 tsp garlic powder
    1 tsp rosemary
    1 tsp thyme


Begin cooking brown rice according to package instructions. While rice is cooking, brown turkey in a skillet with basil, parsley, garlic powder, rosemary, thyme (all spices to taste), and very finely chopped mushroom and onion. Drain. Add can of plain tomato sauce. Add rice.

Take this mixture and stuff 4 large green bell peppers that have had the seeds and tops removed (like little bowls). Once all mixture is used up, open can of pizza sauce and pour on top of peppers. Bake at 350 degrees for an hour and a half to 2 hours (or about an hour to an hour and a half at 400). Sprinkle cheese on top.

You can cut sodium content by using no-sodium added tomato sauce. Make 4 peppers. You can also make smaller servings by spreading mixture out across 6 medium bell peppers.
