Corn in the batter gives delicious flavor and makes cakes that fit many meals. Corn in the batter gives delicious flavor and makes cakes that fit many meals.
Number of Servings: 6


    2 c flour
    1 c cornmeal
    2 2/1 T baking powder
    1/2 T salt
    2 t sugar
    6 T egg substitute
    2 c milk, nonfat
    1 can sweet corn


Combine flour, baking powder, salt, and sugar, and stir together in a bowl.

Combine the egg, milk and corn and add to flour. Mix only enough to dampen flour.

Bake on a hot griddle. Sere at once or keep warm in a 200 degree oven until ready to serve.

With syrup or honey these are a delicious breakfast or with turkey and cranberry sauce or sausage and veggies they make a great dinner or supper.

Makes about 2 dozen cakes. Serving size calculated for six servings of 4 cakes each.
