Introduction

Sweet potato and butternut squash soup with a bit of curry.
I haven't tried it yet, but soon! Copied recipe from a magazine (?) at the doctor's office.

Number of Servings: 6

Ingredients

    1 med. red onion,chopped
    2 carrots, peeled and diced
    1 small sweet potato, peeled and diced
    1/2 small butternut squash, peeled and diced
    1 Tbsp olive oil
    1 tsp mild curry paste
    1 tsp honey
    3 1/4 cups veg.broth

    Salt, pepper,sour cream & handful of cilantro leaves for serving--all to taste, not calculated in calories

Directions

1. Saute veggies in oil in a large pan 10 to 15 minutes until soft. Stir in curry paste & honey, cook 1 minute. Add broth and bring to a boil, then reduce heat and simmer uncovered, 20 to25 minutes. Let cool a bit then blend until smooth in blender.

2. Season to taste with salt and pepper. To serve, top each bowl with a small spoonful of sour cream and a few cilantro leaves.
